Anne’s Chile Relleno Casserole

Ingredients

  • 1/2 lb grated cheddar cheese
  • 1/2 lb grated Jack cheese
  • 2 (1 lb) cans Whole Green Chiles, drained
  • 4 eggs
  • 2.tablespoons flour
  • 1/2 teaspoon salt
  • 1 large can evaporated milk

Directions

  1. Pre-heat oven to 350-F.
  2. Line a 9×13 dish with a layer of split peppers.
  3. Cover with a mix of the two cheeses, reserving half.
  4. Top with a second layer of peppers.
  5. Finish with a top layer of the cheeses
  6. Beat the eggs, flour, salt and milk. Pour over the top.
  7. Bake for 45 minutes.
