Apple & Oat Crisp

Ingredients

Filling

  • 6 apples (I use 3 Granny Smith and 3 Golden Delicious) – peeled, cored, and sliced 1/4 inch thick
  • 2 tablespoons granulated sugar
  • 3/4 teaspoon ground cinnamon
  • Pinch of salt
  • Pinch of freshly grated nutmeg (optional)
  • 1 tablespoon fresh lemon juice (optional)

Topping

  • 3/4 cup packed light brown sugar
  • 3/4 cup rolled oats
  • 1/2 cup all-purpose flour
  • Pinch of salt
  • 6 tablespoons cold unsalted butter, cut into small pieces

Directions

  1. Pre-heat oven to 375°F.
  2. Spray 8-inch square (2-quart) baking dish.
  3. In medium bowl, mix flour, oats, brown sugar, and cinnamon until blended.
  4. Cut in cold butter, using fork or pastry blender, until mixture is crumbly. Set aside.
  5. In large bowl, mix filling ingredients until well coated.
  6. Spread evenly in baking dish.
  7. Sprinkle streusel over top.
  8. Bake 30 to 35 minutes or until topping is golden brown and juices are bubbling along edges.
  9. Cool at least 20 minutes before serving.
  10. Best served warm with vanilla ice cream.
