I love this salad at Beaming but have yet to try this recipe.
For the salad
1 bunch curly kale
1 cup fennel (shaved)
1/2 cup goji berries
3 tablespoons hemp seeds
Destem the curly kale and massage with your hands to soften and reduce the bitterness of the kale with lemon juice, a little olive oil and salt & pepper. Add the dressing, shaved fennel, goji berries and sprinkle with hemp seeds.
1 cup raw organic cashews (soaked for 2-4 hours)
2 tablespoons fresh lemon or lime juice
1 tablespoon raw honey
1 tablespoon dried onion flakes
1-2 tablespoon fresh chopped basil
1-2 tablespoon fresh herbs of choice
2-4 cloves fresh garlic, minced
sea salt & fresh ground pepper
Put the soaked drained nuts and water in a vitamix blender and blend well. Add remaining ingredients until creamy.
