Simple Chocolate Pudding

Ingredients

  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon kosher salt
  • 3 cups milk (I use 2%)
  • 1 teaspoon vanilla

Alternative recipe using chocolate chips

  • ⅓ cup granulated sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon kosher salt
  • 3 cups milk (I use 2%)
  • ¼ cup semisweet chocolate chips
  • 1 teaspoon vanilla

Alternative recipe using egg yolks and less cornstarch by Betty Crocker

  • 1/2 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 2 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 2 cups milk
  • 2 large egg yolks, slightly beaten
  • 2 teaspoons vanilla

Directions

  1. In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt.
  2. Over medium heat, slowly add the milk, whisking constantly.
  3. Bring the mixture to a boil and continue to whisk for an additional minute. The mixture will be thick at this point.
  4. Remove from heat and stir in the vanilla, butter (and chocolate chips, if using alternate recipe) until melted.
