Crunchy Cheddar Chicken & Brown Rice Casserole

Ingredients

  • 1 pound chicken tenders, cut into bite-sized pieces
  • 3 cups pre-cooked short-grain brown rice (for white rice see version below)
  • 2 tablespoons butter, melted
  • 1/2 cup plain panko breadcrumbs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove garlic, minced or 1/4 teaspoon garlic powder
  • 1 1/4 cup chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded part skim mozzarella

Directions

  1. Pre-heat oven to 375°F.
  2. Rinse 1 cup uncooked brown rice (I prefer short grain). Cook with 1 3/4 cup chicken broth. Allow to cool completely before using in the casserole.
  3. Shred the cheeses and mix together.
  4. In a small bowl, mix melted butter and bread crumbs; add 1/2 cup of the cheese and mix well; set aside.
  5. In an 8-inch square (2 quart) baking dish, mix chicken, rice, salt, pepper, garlic, chicken broth, and remaining cheese.
  6. Bake 25-30 minutes or until most of the liquid is absorbed. Remove and set the oven to broil.
  7. Sprinkle the cheese/bread crumb mixture evenly over rice mixture. Broil about 3-5 minutes or until crumbs are golden brown.
  8. Sprinkle with parsley.

1.5 sized batch for 13×9 inch baking dish

  • 1.5 pound chicken tenders (one pound works well too)
  • 1.5 cups uncooked brown rice
  • 3 T butter
  • 3/4 cup panko
  • 1.5 teaspoon salt
  • 3/4 teaspoon pepper
  • 3/4 teaspoon garlic powder
  • 1 3/4 plus 2 tablespoons broth
  • 3 cups shredded cheese
  1. Pre-heat oven to 375°F.
  2. Cook rice in 2.5 cups plus 2 T broth for 30 minutes. Allow to cool.
  3. In small bowl, mix melted butter and bread crumbs; add 3/4 cup of the cheese until well mixed. Set aside.
  4. In a 13x9x2 inch baking dish, mix chicken, rice, salt, pepper, garlic powder, chicken broth and remaining cheese until well mixed.
  5. Bake 30-35 minutes or until most of the liquid is absorbed. Remove from oven and set the oven to broil.
  6. Sprinkle the cheese/bread crumb mixture evenly over rice the casserole. Broil about 3-5 minutes or until the topping is golden brown.
  7. Sprinkle with parsley.
