Crunchy Cheddar Chicken & Rice Bake

Adapted from Pilsbury.

White Rice Version (see brown rice version below)

Ingredients

  • 2 tablespoons butter, melted
  • 1/2 cup plain panko crispy bread crumbs
  • 1 pound chicken tenders, cut into bite-sized pieces
  • 1 cup uncooked regular long-grain white rice (for brown rice, see recipe below)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 2 1/2 cups chicken broth
  • 2 cups shredded sharp cheddar cheese (I prefer Tilamook)
  • Chopped fresh Italian (flat-leaf) parsley, if desired

Directions

  1. Heat oven to 375°F.
  2. In small bowl, mix melted butter, bread crumbs, and 1/2 cup cheese until well mixed. Set aside.
  3. In an 8-inch square (2 quart) baking dish, mix chicken, rice, salt, pepper, garlic powder, chicken broth and remaining cheese until well mixed.
  4. Bake 40 minutes or until rice is tender and most of the liquid is absorbed.
  5. Remove and set the oven to broil.
  6. Sprinkle the cheese/bread crumb mixture evenly over rice mixture. Broil about 3-5 minutes or until crumbs are golden brown.
  7. Sprinkle with chopped parsley.

Brown Rice Version (preferred)

Ingredients

  • 1 pound chicken tenders, cut into bite-sized pieces
  • 3 cups pre-cooked short-grain brown rice (made from 1 cup uncooked rice (preferably cooked with chicken broth)
  • 2 tablespoons butter, melted
  • 1/2 cup plain panko breadcrumbs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 cup chicken broth
  • 2 cups shredded sharp cheddar cheese (I prefer Tilamook)
  • Chopped fresh Italian (flat-leaf) parsley, if desired
