Mashed Potato Casserole

Gretta’s Mashed Potato Casserole

3 cups mashed potatoes (made from instructions on the box for 6 servings of Potato Buds) plus a bit extra *(see note)
1 package cream cheese, softened
1 stick butter, softened
2 eggs
4 tablespoons flour
1/2 tsp salt and pepper to taste
1 container French fried onions

Pre-heat oven to 300 degrees.

Follow package directions to make 6 servings of Potato Buds – which results in 3 cups mashed potatoes – *and then add extra potato buds flakes to make the potatoes drier than you would normally serve (about 1/2 cup more than the directions call for).

Mix prepared mashed potatoes with cream cheese, butter, eggs, flour, salt, and pepper in mixer until well blended.

Place in a medium-sized casserole. Top with French fried onions.

Bake uncovered for about 35 minutes or until a little color is added to the top.

Make-ahead Fluffy Mashed Potato Casserole with Crisp Onion Topping

  • 2 cups mashed potatoes
  • 8 ounces cream cheese, softened
  • 1 small onion, finely chopped
  • 2 eggs, lightly beaten
  • 2 tablespoons flour
  • salt and pepper
  • 1 can (2.8 ounce size) French fried onions, for topping

In a large bowl, combine potatoes, cream cheese, onion, eggs, and flour. With a mixer on medium speed, mix until blended. Increase the speed to high and beat the potato mixture until it’s light and fluffy. Season with salt and pepper and mix well. 

Cover and refrigerate for 8 hours or up to 2 days.

Later: Remove potato mixture from refrigerator. Let it sit for up to 1 hour. Preheat oven to 325 degrees F.

Put potato mixture in a greased 3-quart casserole dish. Spread French fried onions on top of the potatoes mixture and bake for 30 to 40 minutes, until bubbly.

Puffed Potatoes

  • 2 2/3 cups Potato Buds
  • 2 2/3 cups water
  • 2/3 cup milk
  • 4 tablespoons butter
  • 1 teaspoon salt, divided
  • 8 ounces cream cheese, at room temperature
  • 1 egg, beaten

Preheat oven to 350º.
Prepare potato buds following the recipe on the box, using the above ingredient amounts, but only 1/2 teaspoon of the salt. Turn burner off and add the softened cream cheese, egg, instant onion and the rest of the salt.
Put potatoes into a greased 9 x 13 baking pan or use a smaller pan for thicker potatoes. Sprinkle with paprika if desired and bake 45 minutes.
