Dad’s Peanut Butter Oatmeal Cookies (Gluten/Dairy Free)

Ingredients

  1. 1 large egg
  2. 1/2 cup sugar
  3. 1/4 cup olive oil
  4. 2 teaspoons vanilla extract
  5. 1 tablespoon boiling water
  6. 1 cup gluten free rolled oats
  7. 1/4 teaspoon salt
  8. 1/2 teaspoon baking soda

Directions

  1. Preheat over to 350-F.
  2. In a medium bowl combine the first 5 ingredients. Mix until smooth.
  3. Add the rest of the ingredients and mix well.
  4. Place about 1/5 tablespoons onto a baking sheet lined with parchment paper.
  5. Bake for about 11-13 minutes.
  6. Allow to cool for about 3-5 mins on the baking sheet, then transfer to cooling rack.
