Dad’s Peanut Butter Oatmeal Cookies (Gluten/Dairy Free)
- 1 large egg
- 1/2 cup sugar
- 1/4 cup olive oil
- 2 teaspoons vanilla extract
- 1 tablespoon boiling water
- 1 cup gluten free rolled oats
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- Preheat over to 350-F.
- In a medium bowl combine the first 5 ingredients. Mix until smooth.
- Add the rest of the ingredients and mix well.
- Place about 1/5 tablespoons onto a baking sheet lined with parchment paper.
- Bake for about 11-13 minutes.
- Allow to cool for about 3-5 mins on the baking sheet, then transfer to cooling rack.
