If you want to make a large batch of vinaigrette to store in the refrigerator, make sure to use only vinegar. The lemon juice has a shorter life than any of the other ingredients in the dressing. With vinegar, this dressing will last for several weeks in the fridge.
- 4 tablespoons olive oil
- 2 tablespoons vinegar or lemon (or one of each – I like red wine vinaigrette)
- 1 teaspoon maple syrup or honey
- 1 tablespoon dijon mustard
- 1/4 teaspoon salt
- Freshly cracked pepper, to taste
Place all ingredients into a jar with a lid and shake well.
