Roasted Kabocha or Delicata Squash

Preheat oven to 400.

1. Wash squash and cut down the middle. Scrape out the the seeds.
2. Cut into the size you like – either small wedges or slices.
3. Toss with 1-2 tablespoons olive oil or spray. Sprinkle with salt and pepper
4. Roast for approximately 30 minutes or until fork tender and browned in spots.
