Roasted Kabocha or Delicata Squash

I love Kabocha and Delicate squash because they can be eaten with the skin on.

Preheat oven to 400.

1. Wash squash and cut down the middle. Scrape out the the seeds.
2. Cut into the size you like – either small wedges or slices.
3. Toss with 1-2 tablespoons olive oil or spray. Sprinkle with salt and pepper
4. Roast for approximately 25-30 minutes or until fork tender and browned in spots.
