Stuffed Artichokes

1 cup fresh breadcrumbs (or Panko)
1/2 clove garlic
2 tablespoons red wine vinegar
1 tablespoon olive oil
1 tomato
1/4 cup parsley
1 teaspoon salt
1/2 teaspoon pepper
add water if needed

Soak breadcrumbs in vinegar until moist. Add a bit of water if needed.

Heat olive oil or butter in a skillet. Cook garlic until fragrant. Add tomatoes and cook until softened. Add salt and pepper. Mix in breadcrumbs. Turn off heat and mix in parsley.
Or skip skillet and put all ingredients into a bowl. Stuff a steamed artichoke and bake at 350 45 minutes.
