Trader Joe’s Lentil Salad

Made from ready-to-eat items from Trader Joe’s, this is a quick, delicious, and healthy salad that holds up for days in the fridge.

Ingredients

  • 1 container Trader Joe’s Bruschetta Sauce (refrigerated)
  • 1 package Trader Joe’s Steamed Lentils (refrigerated)
  • 1 bag baby spinach
  • Feta cheese (optional)
  • Basil (optional)

Directions

  1. In a bowl, combine entire packages of lentils and bruschetta sauce.
  2. To serve, lay a bed of baby spinach onto the bottom of a bowl. Top with a scoop of lentils and garnish with feta cheese and torn basil.


Beaming Rockstar Smoothie Copycat (Your new favorite smoothie)

Ingredients

  • 1/2 cup Almond milk
  • Coconut water (at the end if needed for thinning)
  • 1/2 frozen banana or (1/4 Avocado to make low-glycemic)
  • 1 date or (1 teaspoon Yacon syrup to make low glycemic) (optional)
  • 2 tablespoons Vanilla Beaming *Protein Powder (see note for sub)
  • 2 cups spinach
  • 1 teaspoon coconut butter (optional)
  • 5 cubes of Ice
  • Add: Fit Matrix, E3live & Blue Majik (I skip this)

My additions – sometimes I throw in a spoonful of cacao nibs or 2 tablespoons of granola

*A comparable protein powder substitute that is much more affordable. I use 1 scoop of the unflavored whey plus 1/2 scoop of the Vanilla Veggie Protein (see image).

Directions

Add all the ingredients to a high speed or regular blender. If adding cacao nibs, blend a bit first and add at the end to maintain crunch.

Beaming Cafe Smoothies

Rockstar Smoothie

I watched a demo at Beaming on how to make some of their signatures smoothies. This one was my favorite and I make it at home every day. They didn’t give exact proportions, so this is my best estimation.  

My sub for Beaming Protein Powders. The Veggie one is found at Sprouts. The Unflavored Whey found on Amazon.

  • 1 cup (8 ounces) Almond Milk
  • 1/2 cup (4 ounces) organic Coconut water
  • 2 Tbsp. Beaming Raw Organic Plant Based Superfood Protein Blend w/ Greens
  • 1-2 Tbsp. of Beaming Superfood Smoothie Mix (optional)
  • 1 medjool date
  • 1 Tbsp. sprouted almonds (optional)
  • 1 tsp. cinnamon, vanilla and/or sea salt (optional)
  • ¾ cup frozen banana
  • ¼ cup ice

Libido-Enhancing Smoothie

  • 1 cup sweetened or unsweetened almond milk
  • 1/2 cup coconut water
  • 1 tablespoon almond butter
  • 1/2 cup frozen blueberries
  • 1/2 fresh or frozen banana
  • 1 handful spinach leaves
  • 2 tablespoons Beaming or other plant protein powder with greens
  • 1 tablespoon plant-based smoothie powder
  • 1 teaspoon maca powder
  • 2 ice cubes

Post Workout Smoothie

  • 1/2 cup sweetened or unsweetened almond milk
  • 1/2 cup coconut water
  • 2 tablespoons Beaming or other plant protein powder
  • 1/2 teaspoon greens protein powder such as Amazing Grass or Vitamineral Green
  • 1 teaspoon coconut butter or coconut oil
  • 1 date pit removed
  • 1 small fresh or frozen banana
  • 4-5 ice cubes

Digestion-Soothing Juice

  • 3 cucumbers
  • 1 (3-inch) piece fresh ginger
  • 1 large fennel bulb and tops
  • 1/2 head of celery 4-5 stalks
  • 1 small bunch fresh cilantro
  • 2 Granny Smith apples
  • 1-2 tablespoons fresh lime juice juice by hand (Stir in After blending)
  • Dash of sea salt optional (Stir in after blending)

Holiday Survival Smoothie

  • 1 cup almond milk
  • 1 cup coconut water
  • 1/8 ripe avocado
  • 1/4 cup organic blueberries
  • 2 cups organic spinach
  • 1 medjool date (pitted)
  • 2 teaspoons Beaming Superfood Smoothie Blend
  • 2 tablespoons Beaming Organic Raw Plant Based Superfood Protein Blend with Greens

Persimmon Smoothie

  • 1/2-1 cup ice (depending on how cold and thick you want it)
  • 3/4 cup almond milk
  • 1/2 cup organic coconut water
  • 1 T coconut flakes or coconut butter
  • 1 T goji berries
  • 1 tsp maca (optional)
  • 1 small persimmon or 3/4 of med / large
  • 1 tsp cinnamon
  • 1 tsp yacon (optional)
  • 1 T of Beaming Superfood Plant Protein
  • 1 T almond butter
  • 3/4-1 cup ice

Blend together until smooth. Garnish with a sprinkle of goji berries

Lean and Green Smoothie

  • 3/4 cup almond milk
  • 3/4 cup coconut water
  • 2–3 Tbsp Beaming Superfood Protein Powder
  • 1/4 avocado
  • 1/4 cup frozen banana
  • 1 large handful of spinach
  • 1 tsp maca
  • 1 Tbsp hemp seeds for garnish (Sprinkle on top after blending)

Vanilla-Matcha Protein Smoothie

  • ¾ cup unsweetened almond milk
  • ½ banana
  • 3 tablespoons raw cashews
  • 1 tablespoon mashed avocado
  • 1 large Medjool date, pitted
  • 2 tablespoons Beaming Protein Powder
  • 1 teaspoon PANATEA® matcha powder
  • 1 teaspoon vanilla extract
  • 1 handful baby spinach (optional)
  • ¾ cup ice
  • Liquid stevia, to taste (optional)

Blend all the ingredients together except the ice and stevia until smooth. Add the ice and blend until frosty. Taste, and add adjust sweetness with stevia if desired.

Beaming Signature Smoothie

  • 16oz unsweetened almond milk
  • 2-3 tablespoons Beaming Superfood Plant Protein with Greens
  • 1/4-1/2 cup ice
  • Recommended Fruit Choices
  • 1/4 cup frozen berries – blueberries, strawberries or raspberries (these are low glycemic and therefore great for when on a cleanse)
  • 1/2 pear or apple (again, a great fruit choice that is low glycemic and will not spike insulin levels.)

  • 1/4 avocado (great for adding texture, good fat burning fat and creamy texture)

Brain-boosting smoothie

  • 1/2 fresh or frozen banana

  • 1/4 teaspoon spirulina or blue-green algae powder
  • 1 tablespoon whole or ground chia seeds
  • 3-4 ice cubes

  • 1 cup unsweetened almond milk
  • 6-8 raw almonds
  • 1 date pit removed
  • 1/2 fresh or frozen banana
  • 2 tablespoons Beaming or other plant protein powderwith or without greens

  • Dash of cinnamon

High-Energy Smoothie

  • 1 cup sweetened or unsweetened almond milk

Beaming Almond Milk

1-2 T of organic raw almond butter mixed with 1 cup of water, a tad of sea salt, a little vanilla and cinnamon if desired.  Blend away.

Acai Bowl

  • 1 packet frozen ACAI (preferably unsweetened)
  • 1 cup almond, rice or hemp milk (homemade or boxed)
  • 1/2 cup frozen strawberries
  • 1/2 cup frozen blueberries
  • 1/2 frozen banana
  • 2-3 tablespoons Beaming Organic Raw Plant Based Superfood Protein Blend (with or without Greens)
  • pinch of salt

Blend and then top with granola and fruit
